I have run the dining rooms I now visit as a guest.
Twenty-seven years in Paris restaurants and nightlife. Three brands created from scratch, one club reopening, and today Le Choupinet, a 170-seat Maître Restaurateur brasserie facing the Jardin du Luxembourg. I now live between Paris and Dubai.
What this changes for you
I have hired and trained teams for restaurants, bars and clubs. I have written menus, set prices and read food costs every week. I know what a room looks like when it is about to slip, because I have been on the other side.
When I visit your venue, I see it as a guest and as an operator at the same time.
I started in 1999 as artistic director of Le Bus Palladium, then ran L'Île in Issy-les-Moulineaux.
From 2004 I directed Kong, Philippe Starck's rooftop above the Pont-Neuf, before launching L'Arc Paris at the foot of the Arc de Triomphe, then Bagatelle Mansion in the Bois de Boulogne, and leading the reopening of L'Arc.
In 2015 I opened Yeeels on avenue George V as managing director and partner, and became a partner in Le Baron and Jacopo.
Since 2019 I have owned Le Choupinet, a Maître Restaurateur brasserie facing the Jardin du Luxembourg, open every day from 8am to 1am.
